Job Summary

The Food Court Assistant Manager is responsible for overseeing the day-to-day operations of the food court, ensuring smooth tenant operations, compliance with regulatory requirements, high standards of cleanliness, customer satisfaction, and revenue performance. The role will also support the planning, setup, and operational readiness of new food court projects and expansion initiatives.

Key Responsibilities

1. Operations Management
  • Assist in managing the overall operations of the food court to ensure efficient and smooth daily activities.This includes the running and operations of 2 drinks stalls.
  • Monitor tenant compliance with operational standards, lease obligations, and house rules. 
  • Ensure adequate manpower deployment and operational coverage. 
  • Conduct regular inspections of common areas, facilities, and tenant outlets. 
  • Address operational issues, customer complaints, and tenant concerns promptly. 
2. Food Court Setup & Project Support
  • Participate in the planning, setup, and commissioning of new food court developments and refurbishment projects. 
  • Coordinate with contractors, consultants, tenants, and relevant stakeholders during setup phases. 
  • Assist in tenant onboarding, fit-out coordination, and operational readiness assessments. 
  • Develop and implement operational procedures and guidelines for new food court operations.
3. Regulatory Compliance
  • Ensure compliance with all applicable laws, regulations, licensing requirements, and local authority guidelines. 
  • Monitor food hygiene, safety, cleanliness, and environmental health standards. 
  • Liaise with relevant government agencies and regulatory authorities when required. 
  • Conduct regular compliance audits and implement corrective actions where necessary.
4. Tenant Management
  • Build and maintain positive working relationships with food court tenants. 
  • Monitor tenant performance and adherence to operating standards. 
  • Support lease administration matters and tenant renewals where required. 
  • Coordinate promotional activities and operational campaigns with tenants. 
5. Beverage Stall Operations Management
  • Oversee the daily operations of two beverage stalls within the food court to ensure efficient service delivery and profitability. 
  • Plan and manage manpower deployment, duty rosters, shift scheduling, leave arrangements, and staff attendance to ensure adequate operational coverage. 
  • Supervise beverage stall employees and ensure compliance with company policies, service standards, food safety, and hygiene requirements. 
  • Monitor sales performance and implement initiatives to improve productivity and customer satisfaction. 
  • Manage inventory levels, stock ordering, receiving, storage, and stock replenishment to minimize shortages and wastage. 
  • Conduct regular stock counts and inventory audits to ensure accuracy and accountability. 
  • Monitor cost of goods sold (COGS), beverage consumption trends, and inventory variances. 
  • Oversee cash handling, daily sales reconciliation, payment collection, and submission of sales reports. 
  • Verify supplier invoices, process payments, and ensure timely settlement of operational expenses in accordance with company procedures. 
  • Coordinate with suppliers and vendors to ensure uninterrupted supply of products and consumables. 
  • Ensure all beverage stall operations comply with relevant food safety regulations, licensing requirements, and company operational standards. 
  • Identify opportunities to improve operational efficiency, cost management, and revenue generation.
6. Financial & Commercial Management
  • Monitor operational expenses and recommend cost-control measures. 
  • Assist in budgeting, forecasting, and revenue monitoring. 
  • Support rental collection processes and follow-up on outstanding payments where necessary. 
7. Customer Experience
  • Ensure a safe, clean, and welcoming environment for customers. 
  • Monitor customer feedback and implement service improvement initiatives. 
  • Support marketing and promotional activities to increase footfall and sales performance. 

Key Requirements

  • Diploma or Bachelor's Degree in Business Administration, Hospitality Management, Food & Beverage Management, Retail Management, or related field.
  • Minimum 5 years of relevant experience in food court, F&B outlet management, mall food court operations, or similar environment.
  • Experience in setting up, opening, or commissioning a food court will be a strong advantage.
  • Strong knowledge of food safety, hygiene regulations, licensing requirements, and local authority compliance.
  • Proven experience in tenant management and operational supervision.
  • Strong leadership, problem-solving, and stakeholder management skills.
